At the Allentown Fairgrounds the Ritz has been making its ice cream the same way since the 1940s. It no longer makes it on the premises however because the 1998 fire that nearly destroyed the building damaged its ice cream-making equipment beyond repair. Owner Tom Stinner tracked down a company with the same machinery and supplied the same old-fashioned recipe. The result: the same creamy ice cream with no ice crystals. The restaurant's menu has a lot of unchanged local favorites too including barbecue oyster pies and potato filling.
